ISLAND GIN TASTING NOTES

On the nose, a lovely balance of piney juniper, piquancy of cardamom, with a hint of orange, herbal lime leaf and warm familiar notes of cassia.

Full and rounded in the mouth, with soft citrus and juniper on the fore, followed by layers of fennel, a fruity peppery note and subtle spice. The savoury tones of the pepper and cardamom are balanced by a touch of sweetness from the orange and fennel.

Balanced with spice notes from pepper and cardamom with warm sweet notes from the cassia. Kaffir lime delivers the subtle citrus notes on the finish, encouraging another sip!

IDEAL SERVE

A large measure of Island Gin over ice, garnished with a fresh kaffir lime leaf and a dried orange slice, with two measures of tonic.

Our carefully chosen, and ethically sourced botanicals are steeped for 48 hours. This allows all the flavours and oils to infuse the spirit. Once the gin has been created, we leave it to rest for at least five weeks to enable the flavours to meld and marry together, to create a smooth rounded spirit.

ATLANTIC STRENGTH TASTING NOTES

On the nose, Pleasing forward juniper, with savoury herbal notes of dill and fresh fennel, closing with cedar wood.

Smooth and rounded in the mouth with entertaining bright fresh mint and fennel, then a spicy warmth of cardamom and pepper, closing with hints of soft citrus sweetness.

On the finish, long dry and warming.

SUSTAINABILITY

 

Scilly Spirit Distillery is committed to environmentally friendly production, taking care of our beautiful archipelago.

Our spirits are distilled using a closed cooling system and we are looking to install solar panels so our spirit distillations have minimal environmental impact. Our botanicals, once spent, are composted or are given to the local pigs.

As our bottles are so beautiful, we are sure that very few will be recycled with glass collections, but turned into lighthouses perhaps? In 2019, we won The Drinks Business Award for Design and Packaging in the Spirits Category and in 2020 we won Gold at the San Francisco World Spirits Design Competition which speaks volumes about how lovely our bottle is!

All our local deliveries are made in our battery powered van, so we reduce further CO2 emissions. We have designed cardboard packaging for posting our gin, so we avoid using plastic.

We want to take care of these precious Islands we live on.

Whilst we are not certified organic, our footprint is light.
